Celebrating the wonderful (and diverse) world of corn!

Corn on the cob, done right.

The simple classic way of boiled corn is always a family favourite at our house. However, there are some tips and tricks you can use to bring it to the next level. First of all, heavily salt your water! We see so many recipes that don’t include this step, yes you will add salt later while preparing your corn, but some good salted water will penetrate into the core and the kernels providing a bigger explosion of flavour. If you’re going to a bbq, precook it, throw it on the grill for 5 minutes to reheat and you will have the best corn you’ve ever tasted.

How to make it better: Mexican style corn is quite simple. While traditionally made with white tougher corn, using yellow corn still provides a great experience. Once boiled spread some mayonnaise on top instead of butter, bonus points for lime infused mayo. From there the traditional way in our house is some tajin on top and you are good to go. Many people will tell you to put cotija cheese or other ingredients but save that style of esquites for off the cob corn.

Corn as a side dish

Forget regular boring corn with salt and pepper the next time you are making a side dish for dinner. Instead combine the corn with a few simple ingredients to create a salad that will not only leave your taste buds happy but also provide some extra vitamins at the same time.

Our favourite way is to first char your corn kernels in a screaming hot pan, then mix them into some black beans, red onion, red peppers, avocado, cilantro and fresh lime juice. Season it well and you can have a tasty salad for the whole week.

Gazpacho, summer soup

The saying is what grows together goes together, and corn is no exception here. Pairing it with some other local garden vegetables in this gazpacho will leave your whole family wanting more. It’s so simple, pile in a blender corn, some heirloom tomatoes (bonus points for yellow ones), a yellow pepper, cucumber, olive oil and some good old salt and pepper. Blend it smooth and top with some fresh basil. Classic and modern all at once.

Corn Ice Cream

If you are already making your own ice cream you must try a corn variation and you will be totally surprised at the result. Using your normal custard base of cream, sugar, egg yolks and vanilla add in a can for cream style corn and blend it until smooth. Pour it into the machine and make as normal but top with salted caramel for an ice cream experience like no other.
